Feta and Sunblush Tomato Bread is a delicious bread which you must try.
Ingredients
500g unbleached white bread flour
2tsp salt
7g dried yeast or 20g fresh yeast
1tsp honey
200ml warm water
150ml lukewarm water
250g cubed feta cheese
100g chopped sun blush tomatoes
Optional – chopped basil leaves
Dissolve the yeast and honey in about one third of the warm water in a small bowl. Add 2 tablespoons of weighed flour and stir well. Leave in a warm place for 10-15 minutes to froth up.
Add the bubbly mix to the rest of the flour and salt, and gradually add the remaining liquid. Knead well for about 10 minutes, either by hand or food processor/mixer. Put in a large oiled bowl and cover with a teatowel. Leave in a warm place for 30 minutes until double in size.
Knock back the dough and knead in the cheese and tomatoes. Shape into 2 oblong loaves or a number of rolls and place on a floured baking sheet. It doesn’t matter if the cheese/tomato pokes through. Cover and leave in a warm place until double in size.
Brush top of bread with milk. Heat oven to 220C (200 if fan oven) and bake for 25-30 minutes for loaves, 15-20 minutes for rolls. Cool on a rack.
These are a meal on their own or delicious with salads/kebabs etc.
