- Preheat oven to 200C (fan)
- 325g Organic White flour no.4 (plus extra for rolling)
- 250g Unsalted Butter
- 1/2 tsp Salt
- 7-10tbsp Ice Cold Water
- Approx 200g Caster Sugar
add salt, cube butter and mix together with flour and squish together
add water 2tbsp at time and mix together until you get a dough
refrigerate for 2 hours and then remove and roll and fold, sprinkling sugar each time over rolled dough.
then repeat above again 3 more times
After removing from fridge roll into a cylinderical shape and cut 1cm strips across the width of the dough.
Lay out Palmier shapes onto baking tray
Place in oven for 10-15 minutes until nice and brown, then flip them over and leave for a further 5-10 mins to
brown on the other side.
remove and leave to cool
