115g softened butter
115g caster sugar
115g self raising flour
2 eggs
2 tablespoons of coffee dissolved in boiling water
Preheat the oven to 190c,375f,gas mark 5. Line 2 x12 hole bun tins with 16 paper cases. Place the butter and sugar in a bowl and beat together until light and fluffy, then gradually beat in the eggs. Add the coffee mixture. Sift in the flour and gold into the mixture. Spoon into the paper cases. Bake in the preheated oven for 15-20 minutes. Transfer to a wire to cool completely.
Either eat as they are or ice to taste. I mix some more coffee with icing sugar for an extra coffee taste. Enjoy
