1 teaspoon sugar dissolved in 150ml warm water, and then 1 tablespoon of yeast mixed in. Leave for about 10 minutes to activate.
In a bowl, mix 650g of bread flour (I do half and half white & wholemeal)
25g of 5 seed mix
25g linseed (good source of fibre, protein and omega-3)
2 teaspoons of salt
2 tablespoons of olive oil
Then add the activated yeast solution and a further 350ml of warm water.
Mix well and knead for about 8 minutes.
Leave to prove until it's doubled in size.
Knock out the air and divide into as many rolls as you'd like, depending on how big you want them.
Leave them to prove whilst the oven heats up to 220 celsius.
Bake for about 12 minutes for an average size roll. (When cooked, you should get a nice hollow sound by taping on the bottom) Bring out of the oven and top with grated vegan cheddar cheese. Return to the oven for 2 minutes. Leave to cool and enjoy.
