450g bananas, peeled and mashed (the older the better)
225g self-raising flour (Shipton 113)
100g margarine
150g caster sugar
1/2 tsp salt
2 tbsp chia seeds (ground), mixes with 6 tbsp water
175g raisins (or other dried fruit of your choice...or what you have in the cupboard)
Pre-heat oven to 180°C/Gas 4
Grind chia seeds and mix with water.
Mix all ingredients, except raisins, together.
Add dried fruit and spoon mixture in to greased or lined loaf tin.
Bake for one and a half hours - it's done when a skewer comes out clean from the centre.
Cool and slice.
(I often make two at a time and freeze one.)
