(Makes either 1 x 2lb loaf or 2x 1lb loaves)
500g/1lb Irish brown soda bread flour
25g/1oz bran
1.5 teaspoons bicarbonate of soda
75g/3oz cranberries (dried or fresh)
2 teaspoons of mixed spice
grated zest of one orange
2oz unrefined dark muscovado sugar
pinch of salt
1 pint buttermilk (or pint of milk with lemon juice)
handful of organic whole oats
This is so easy!
1.Pre heat the oven to Gas Mk 6 /200c/400f
2.Grease or line 1x 2lb loaf tin or 2x 1lb loaf tins
3.Mix all the dry ingredients together in a large bowl
4.Stir in the buttermilk to form a nice dropping consistency,
if using fresh cranberries, gently stir these in last
5.Pour into prepared tins sprinkle the tops with oats.
6.Bake in pre heated oven until well risen with a good crust-
2lb loaf for 1-1.15 hours
1lb loaves 35-40 minutes
7.Cool on a wire rack
Lovely toasted.
