Ingredients
Eggs : 3
Sugar : 140g
Sea Salt : 1 pinch
Honey : 1 tbsp
Oil : 1 tbps
T55 flour : 130g
Baking powder : 5g
Zest of 1 organic lemon
Melted butter : 130g
Milk : 50g
Method
- Wisk together the eggs with the sugar and honey.
- Add the oil.
- Add the flour, baking powder, lemon zest and mix gently (you don't want the mix to be to aerated).
- Finally add the milk and cooled melted butter.
- Leave to rest in the fridge for a few hours, or best, one night.
- Preheat the oven at 180°/200°
- Grease generously a madeleine tin.
- Using a piping bag or a spoon, fill the tin, and be careful not more than half or the madeleines will spread and not rise.
- Bake until risen for app. 15 min.
- Take out of the tin immediatly.
