Miller’s tip

Khorasan has a particularly notable flavour, almost with a hint of corn to it. There is a Khorasan fresh pasta recipe in our cookbook "A Handful of Flour" if you want to give it a try. Khorasan makes great pici to serve with a cacio e pepe sauce. There is also a comforting autumn / winter recipe in the book for steamed Khorasan pudding with popcorn brittle, ideal for long winter nights by the fire.

Description

Named after the Khorasan region of Northern Iran, our Khorasan flour is produced from an ancient variety of Durum wheat named ‘Khorasan’. The wheat is descendant of Emmer and have been traditionally cultivated over the centuries in subsistence farming systems in the Near East and Central Asia- Khorasan wheat is ideally suited to organic farming practices being a tall variety which is naturally resistant to fungal attack. In keeping with these ancient traditions, we gently stonegrind the Khorasan wheat to produce a wholemeal flour suitable for breads and pastas. Some with mild sensitivities to modern wheat have found they can enjoy products with Khorasan Flour.
